Tom Yum Soup (Serves 2-4)
Ingredients:
- 4 cups chicken broth (or vegetable broth for a vegetarian option)
- 2 tablespoons Tom Yum paste
- 1 cup shrimp, peeled and deveined (or 1 cup tofu for a vegetarian option)
- 1 cup mushrooms, sliced (such as white mushrooms, shiitake, or oyster mushrooms)
- 1 stalk lemongrass, trimmed and smashed
- 1 medium tomato, cut into wedges
- 1 small yellow onion, thinly sliced
- 2-3 kaffir lime leaves (optional)
- 1-2 Thai chilies, sliced (optional for extra heat)
- 1 tablespoon lime juice
- 1 tablespoon fish sauce (adjust to your liking)
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions:
- Prepare the broth: In a medium saucepan, bring the chicken or vegetable broth to a boil.
- Add aromatics: Stir in the Tom Yum paste, lemongrass, and kaffir lime leaves (if using). Let it simmer for 5 minutes to allow the flavors to infuse.
- Add vegetables: Add the mushrooms, tomato, and onion. Cook for another 3-4 minutes until the vegetables are tender.
- Cook the shrimp/tofu: Add the shrimp (or tofu for vegetarian). Simmer until the shrimp is cooked through and turns pink (about 3 minutes) or until the tofu is heated through.
- Adjust seasoning: Taste the soup and add Thai chilies for extra heat, if desired.
- Serve: Ladle the soup into bowls, garnish with fresh cilantro, and serve with lime wedges on the side for an extra burst of freshness.
