Thai Cashew Chicken

Ingredients:

  • 200g (7 oz) chicken breast, thinly sliced
  • 1/2 cup unsalted roasted cashew nuts
  • 1 medium onion, thinly sliced
  • 1 bell pepper, sliced
  • 2-3 cloves garlic, minced
  • 1-2 tablespoons B-Spicy Spicy Cashew Chili Paste (adjust to taste)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon vegetable oil
  • 2-3 tablespoons chicken stock
  • Green onion and coriander, chopped, for garnish

Instructions:

  1. Prepare the ingredients by slicing the chicken, onion, and bell pepper, and mincing the garlic.
  2. In a hot pan, heat the vegetable oil and stir-fry the chicken slices until fully cooked, then set aside.
  3. In the same pan, add the garlic, onion, and bell pepper, and sauté for 1-2 minutes.
  4. Add the B-Spicy Spicy Cashew Chili Paste, soy sauce, oyster sauce, fish sauce, brown sugar, and chicken stock. Stir and let it simmer for about 2 minutes.
  5. Return the cooked chicken and cashews to the pan, mixing everything well, and cook for an additional 1-2 minutes.
  6. Serve hot over rice, garnished with chopped green onion and coriander.
