
Thai Cashew Chicken

Ingredients:
- 200g (7 oz) chicken breast, thinly sliced
- 1/2 cup unsalted roasted cashew nuts
- 1 medium onion, thinly sliced
- 1 bell pepper, sliced
- 2-3 cloves garlic, minced
- 1-2 tablespoons B-Spicy Spicy Cashew Chili Paste (adjust to taste)
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
- 2-3 tablespoons chicken stock
- Green onion and coriander, chopped, for garnish
Instructions:
- Prepare the ingredients by slicing the chicken, onion, and bell pepper, and mincing the garlic.
- In a hot pan, heat the vegetable oil and stir-fry the chicken slices until fully cooked, then set aside.
- In the same pan, add the garlic, onion, and bell pepper, and sauté for 1-2 minutes.
- Add the B-Spicy Spicy Cashew Chili Paste, soy sauce, oyster sauce, fish sauce, brown sugar, and chicken stock. Stir and let it simmer for about 2 minutes.
- Return the cooked chicken and cashews to the pan, mixing everything well, and cook for an additional 1-2 minutes.
- Serve hot over rice, garnished with chopped green onion and coriander.
