
Red Curry Stir Fry Pork

Ingredients:
- 200g (7 oz) pork tenderloin, thinly sliced
- 2 tablespoons red curry paste
- 1 tablespoon cooking oil
- 1 medium onion, thinly sliced (optional)
- 1/2 cup chopped long beans or green beans (optional)
- 1 teaspoon brown sugar
- Soy sauce, to taste
- Thai basil, for garnish
Instructions:
- In a medium-sized hot pan, heat the cooking oil. Add the onion (if using) and red curry paste, and stir-fry for a few minutes until the onion is translucent.
- Add the sliced pork to the pan, stirring to coat it well with the curry paste mixture.
- Season with brown sugar and soy sauce to taste. Add the long beans and continue to sauté until the pork is cooked through and the beans are tender.
- Garnish with fresh Thai basil and serve hot over cooked rice.
Note:
Feel free to substitute the pork with beef, chicken or tofu based on your preference.
