Red Curry Stir Fry Pork

Ingredients:

  • 200g (7 oz) pork tenderloin, thinly sliced
  • 2 tablespoons red curry paste
  • 1 tablespoon cooking oil
  • 1 medium onion, thinly sliced (optional)
  • 1/2 cup chopped long beans or green beans (optional)
  • 1 teaspoon brown sugar
  • Soy sauce, to taste
  • Thai basil, for garnish

Instructions:

  1. In a medium-sized hot pan, heat the cooking oil. Add the onion (if using) and red curry paste, and stir-fry for a few minutes until the onion is translucent.
  2. Add the sliced pork to the pan, stirring to coat it well with the curry paste mixture.
  3. Season with brown sugar and soy sauce to taste. Add the long beans and continue to sauté until the pork is cooked through and the beans are tender.
  4. Garnish with fresh Thai basil and serve hot over cooked rice.

Note:

Feel free to substitute the pork with beef, chicken or tofu based on your preference.
